Just like the song, this dessert blends sweetness with a hint of bittersweet memory—ripe bananas caramelized in brown sugar and butter, echoing the warmth of a summer romance. As Swift sang about love that lingers like a favorite song, each bite of this sundae is layered with flavor and feeling. The recipe walks you through each step, from crafting the rich sauce to the perfect scoop of vanilla ice cream. Our Debut Dessert

What if I told you that I was going to take a Taylor Swift song and transform it into a dessert? …Welcome! This is the first in a series called Swift Heart Bakes, where I take a Taylor Swift song and turn it into an edible masterpiece! And with it being our debut post, it seemed fitting to tackle Taylor’s debut single, Tim McGraw.

Tim McGraw is a nostalgic country ballad that reflects on a past summer romance. The song captures themes of young love, longing, and the bittersweet memories tied to a specific time and place. With gentle guitar melodies and heartfelt lyrics, Swift reminisces about a relationship that faded but left a lasting emotional imprint. The overall vibe is sweet, tender, wistful, and deeply personal—setting the tone for the storytelling style she would become known for. As the opening track on her self-titled debut album, the song showcases Swift’s strong country roots and her early ability to blend relatable emotion with vivid imagery.

When starting to conceptualize a dessert, I knew I wanted to take inspiration from an American classic. A dessert that shared the same southern roots as country music and Tim McGraw, who was born in Louisiana…coincidentally the same birthplace of this week’s dessert–the Banana Foster Sundae. 

The Banana Foster Sundae, an American Classic

The Banana Foster Sundae is a rich, indulgent dessert that traces its roots to New Orleans, Louisiana. It originated in 1951 at Brennan’s Restaurant, where chef Paul Blangé created it in honor of Richard Foster, a friend of the restaurant’s owner and a civic leader in the city. Originally called Bananas Foster, the dish features bananas sautéed in a sauce of butter, brown sugar, cinnamon, dark rum, and banana liqueur—then flambéed and served over vanilla ice cream. Over time, variations like the Banana Foster Sundae emerged, adding layers of texture and presentation while keeping the signature caramelized banana flavor. The dessert has since become a New Orleans classic, celebrated for its dramatic preparation and decadent taste.

Besides sharing the same southern roots as country music and Tim McGraw; the banana foster sundae shares the same sweet and tender characteristics as the gentle melody and heartfelt lyrics of this song. I carefully selected only a few lyrical references to try and capture with garnish choices and plating. As I often do, I started by sketching out a design concept.

We’ve already shared how we ended up with a Bananas Foster Sundae as this week’s featured dessert. Now, let’s dive into the creative ways we brought Tim McGraw to life—using just three of the song’s lyrics as our inspiration.

✨ Swiftie Symbolism Sprinkled In

We had to start strong—with the lyric that kicked off Taylor’s entire career. The opening line of Tim McGraw is the first thing OG Swifties ever heard Tay sing, and it’s a total rom-com moment: cheesy, charming, and absolutely screams young love. So naturally, we had to bring it to life; using two kinds of star sprinkles—one gold, one blue—to mirror both the glimmering stars and those unforgettable eyes from the lyric.

🍪 Cookie Crumbs & Country Roads

At this point, we knew a few sprinkles wouldn’t be enough to make this dessert scream Taylor Swift. This dessert was otherwise subtle—full of Easter eggs only a true fan would decode. But we needed a visual clue that made the theme instantly click. Enter: the Chevy truck. It popped into our minds as the perfect garnish—visually striking, instantly recognizable, and so tied to her debut single. Sure, a sugar cookie doesn’t traditionally go with a Bananas Foster Sundae, but what’s a Tim McGraw tribute without a Chevy and a little rule-breaking garnish? So we steered off the traditional dessert path to park a sugar cookie front and center—honoring Taylor’s roots and giving the dish a recognizable, fan-worthy twist. And the truck’s placement atop our gooey caramel wasn’t just for aesthetics—it’s a nod to the idea of “gettin’ stuck”, whether on backroads or in a relationship.

🌙 Sundae Skies & Moonlit Vibes 

And finally, just like Taylor’s lyrics paint a stunning scene, so did our plating—because dreamy lyrics deserve a dreamy presentation! For the moon’s reflection on a lake, we melted a little ice cream and swirled in blue food coloring to create a soft, shimmery surface. A single rounded scoop sat on top, shining like the glowing moon. And while not obvious to the naked eye, we made a slight departure from the classic recipe and cut our banana slices into stars and half-moons—an extra nod to the night sky that helps close out the song.

Closing Notes & Sweet Goodbyes

And just like Tim McGraw fades out with one final, wistful memory, so does our very first Swift Heart Bakes creation. This dessert is more than a sundae—it’s a love letter to Taylor’s beginnings, a blend of southern sweetness and lyrical nostalgia. Every sprinkle, scoop, and garnish was chosen with intention, echoing the emotions, imagery, and memories wrapped up in her debut single.

3-Ingredient Coconut Milk Vanilla Ice Cream

Prep Time: 5 minutes  I  Cook Time: 20 minutes  I  Total Time: 25 minutes

No eggs or dairy required, this 3-ingredient ice cream is quick and easy to make! The most luxurious, creamy texture and subtle sweetness makes for a refreshing frozen treat on a hot day.

INGREDIENTS:

  • 2x 14 oz. cans of coconut milk
  • 1/3 cup of honey (can substitute 3/4 cup of granulated sugar)
  • 1 tsp of vanilla

INSTRUCTIONS:

  1. If using an ice cream maker attachment, be sure to place it in the freezer at least 24 hours in advance.
  2. Whisk together coconut milk, honey* and vanilla in a mixing bowl.
  3. Pour mixture into your ice cream maker and churn on low speed for 20 minutes. Place in freezer for 3-4 hours to firm up. 
  4. Alternatively, pour mixture into a large Tupperware and place in freezer, stirring every 25 minutes until firm enough to eat.
  5. Take the ice cream out 10-15 minutes before serving to help soften.  
  6. Scoop and enjoy! 

*TIPS:

Coat the interior of your measuring cup with cooking spray, or oil of your choice before measuring your honey. This will help prevent the honey from sticking when pouring into your mixing bowl.

Prep Time: 20 minutes  I  Cook Time: 10 minutes  I  Total Time: 30 minutes  I Yield: 10-12 cookies

This recipe is perfect when you craving a buttery, soft biscuit but don’t have time to make and decorate two dozen!

INGREDIENTS:

I. For the cookies:

  • 3/4 cup of all purpose flour, plus more for dusting
  • 1/2 tsp of baking powder
  • 1/8 tsp of salt
  • 1/4 cup of butter, softened
  • 1/4 cup of granulated sugar
  • 1 egg yolk
  • 1/2 tsp of vanilla

II. For the icing:

  • 1 1/2 cups of icing sugar
  • 5-7 tsp of milk*
  • 1/2 tsp of vanilla

INSTRUCTIONS:

  1. Preheat the oven to 350° F.
  2. Whisk together the flour, baking powder and salt.
  3. Using your stand mixer, beat together butter and sugar until fluffy.
  4. Add in egg yolk and vanilla, and beat until well incorporated.
  5. Add dry ingredients in gradually, mixing on low speed until combined. Be careful not to over-mix.
  6. Gather cookie dough into a ball, and flatten into a 2″ thick round disc. On a floured surface, roll dough out to a 2-3mm thickness.
  7. Cut out cookie shapes. Then, gather up scraps and repeat Step 5 as needed.
  8. Place cookie sheet in the freezer for 5 minutes.
  9. Bake in the oven for 10-12 minutes, or until the edges turn slightly golden. Let them sit on the sheet a few minutes before moving them a wire rack to cool completely.
  10. Once the cookies are completely cool, make the icing by whisking together all ingredients. Start with 5 teaspoons of milk, and add more as needed to achieve a slightly runny consistency. Ice your cookies by outlining the shape using a squeeze bottle or small piping bag with a tip, then flood the icing within the borders to fill it in.

Bananas Flambé

Prep Time: 5 minutes  I Cook Time: 10 minutes  I Total Time: 15 minutes

This classic flambéed banana-and-caramel sauce comes together in 10 minutes, adding decadence and warmth to your classic vanilla ice cream.

INGREDIENTS:

  • 6 Tbsp of unsalted butter
  • 1/2 cup of brown sugar
  • 1/2 tsp of cinnamon 
  • 1/2 tsp of nutmeg
  • 1/4 tsp salt
  • 3x medium bananas
  • 1/4 cup of rum (white or aged)

INSTRUCTIONS:

  1. Prepare your bananas, usually sliced in half, length-wise.
  2. In a large skillet over medium-high heat, melt butter with brown sugar, cinnamon, nutmeg and salt together. Mix for approximately 2 minutes, stirring continuously, until the liquid begins to bubble.
  3. Add bananas, flat side down. Continue cooking, swirling gently until liquid resembles a smooth caramel sauce.  
  4. Add rum. Be sure to remove the pan if working over a gas burner before adding rum. Once the rum is added, either tilt the pan to ignite the alcohol from a gas burner, or carefully light with a match.
  5. Continue cooking, shaking the pan, until the flames have died out and the caramel has thickened to a honey consistency, about 1-2 minutes.
  6. Served along side vanilla ice cream, enjoy!
